Simple Vegan & Gluten-Free Recipe Chickpea & Walnut Salad

This Chickpea and Walnut Salad recipe is super easy to make and is alternative to the better known apple cranberry walnut salad and pear and walnut salad. It’s a combination of some of my favourite fresh vegetables in just one bite. It’s packed with protein, and it is very rich in flavour. This recipe is also a perfect side dish because the flavours compliment all dishes.

Chickpeas are known for their richness in vitamins and minerals, especially fibre. It offers plenty of health benefits such as: improving digestion, and it can help you manage your weight properly.

As it’s incredibly high in protein, it’s a great substitute for meat in vegan diets. I recommend this nutritious ingredient when you’re transitioning into a vegan diet.

I added pomegranate because it’s so flavourful and, at the same time, it has anti-inflammatory factors.

You can also add vegetables of your choice as this recipe is quite versatile.

Tasty vegan and gluten-free recipe chickpea & walnut salad

Chickpea walnut salad Ingredients:

  • Chickpeas
  • Onion
  • Walnuts
  • Pomegranate Seeds
  • Salad Leaves of your choice
  • Salt
  • Balsamic Vinegar

Alternatives

  • Chickpeas
    • Cannellini beans – It’s the best alternative, but it’s not amazing
  • Onion
    • Leeks can do the job as well
  • Walnuts
    • Pecan nuts work just as well
  • Pomegranate Seeds
    • You can skip this, but it really does add lots of flavour
  • Salt
    • Low sodium salt
  • Balsamic Vinegar
    • Lemon juice or apple cider vinegar

Instructions:

1.) This recipe is so simple and very easy to make. I used canned chickpeas to keep it simple. Rinse and drain them, and you will be ready to go!

2.) Grab a bowl and toss in 1.5 cups of chickpeas, 0.5 cups of walnuts, 0.5 cups of pomegranate seeds, 1 small onion sliced and a bunch of salad leaves of your choice.

3.) Add a pinch of salt to taste and a light spray of balsamic vinegar for extra flavour. Mix all the ingredients.

4.) Enjoy as a side dish or have it as a main.

    I love the pairing of ingredients and the quick turn around. We’ve tried a chickpea salad before, but weren’t sold. I think the pomegranates might be the trick here, such a combination of flavors.
