Equipment

  • 1 Large bowl
  • 1 Large pot
  • 1 Timer
  • 1 Colander
  • 1 Large baking tray
  • 1 Pair of tongs

Ingredients

  • 1.5 kg Maris Piper potatoes
  • 1.5 tbsp Sea salt for the water
  • 4 tbsp Olive oil
  • 1.5 tbsp Sea salt
  • 1 bulb Garlic broken into cloves
  • 3 tsps Chilli flakes

Instructions

  • Preheat the oven to 220ºC. If the temperature is set below 220ºC, the potatoes might not come up as crispy. Alternatively, high temperatures will burn them before they crisp up.
  • Peel the potatoes and put them in a bowl of cold water to get rid of the excess starch. Afterwards, drain and tip them into a large pot. Use cold water to cover the potatoes.
  • Add 1.5 tbsp of sea salt, and put the pan on the stove. Bring water to boil. Once it's boiling, set up a timer for 8 minutes. When the timer goes off, pour the potatoes into a colander and drain off the water. Leave the potatoes to steam dry for about 5 minutes.
  • Place the potatoes into a large tray. Make sure they have spaces between them and they are dry before you add the olive oil so they roast instead of steam. Drizzle the olive oil over the potatoes and sprinkle over the sea salt.
  • Put the potatoes in the oven and roast them for 30 minutes. If you're using an Air Fryer then cook them for 20 minutes. Take the potatoes out of the oven and add garlic, and chilli flakes. Make sure the potatoes are well-covered with the flakes.
  • Place the potatoes back in the oven and roast them for additional 15-20 minutes however long it takes to get them golden-brown and crispy.
  • Take the potatoes out of the oven and place them on a plate.
  • Serve and enjoy!
