I attended one of the cooking classes in Seoul, South Korea, and now I'm going to share with you this super simple and delicious recipe of Vegan Bibimbap. Bibimbap recipe is a popular Korean dish of rice mixed with cooked vegetables and is typically packed with texture and flavour. It is super easy to make, healthy, delicious and perfect for anyone who loves Asian food like me!
Cook the rice according to the instructions in the package. I used a rice cooker to cook mine. For a healthier version, I used brown rice. You can also use white rice or cauliflower rice for a low-carb version.
FOR THE TOPPINGS
Grate or thinly slice a half piece of carrot, mushroom of your choice, and zucchini. As for this recipe, I used enoki mushrooms. Add a pinch of salt and stir-fry in oil.
Blanch spinach, bean sprouts for 3 minutes. Squeeze and add 1/2 teaspoon of sesame oil. 1/4 teaspoon of minced garlic and a pinch of sesame seeds for extra flavour.
Thinly slice a half piece of radish. Add 1 teaspoon of soy sauce, 1/2 teaspoon of chili powder, a pinch of sugar, vinegar and 1/4 teaspoon of sesame oil, and a pinch of sesame seeds.
FOR THE SAUCE
Mix 2 teaspoons of soy sauce, a pinch of sugar, a teaspoon of sesame oil, a tablespoon of water and sesame seeds.
COMPLETE DISH
Grab a bowl, and put the rice. Top it with all the vegetables prepared and enjoy!
