Ingredients

  • 5 cups Boiling Water
  • 8 pcs Shiitake Mushrooms
  • 1 1/2 cups Mung Beans
  • 100 g. Bok Choy
  • 2 cloves Garlic
  • 1 tsp Soy Sauce
  • 1/4 tsp Salt and Pepper

Instructions

  • Wash the mushrooms with water then soak the shiitake mushroom in 2 cups of boiled water for 1 hour. If you have already pre-soaked your mushrooms, skip this step. 
  • Place 1 1/2 cups of mung beans in a pot with 3 cups of water and 1 tbsp. of salt. Bring to a boil then reduce to a simmer. Cook until tender for about 20-30 minutes. 
  • In a frypan on medium heat, add the garlic and fry for about 20 seconds.
  • Add the sliced mushrooms and soy sauce. Allow to cook for about 3-4 minutes. 
  • Turn the heat to medium-high and add the bok choy and mung beans to the pan and cover with a lid. Season with salt and pepper. After a minute, gently flip the greens over and cook for another minute.
