Stir Fry Noodles with Vegetables | Easy Vegan Recipe

Vegan Stir Fry Noodles is the perfect recipe if you want to cook a delicious dinner without making so much effort. One of the many things I love about this dish is that it never gets boring. You can always customize it with whatever vegetables you have available and of course the stir-fry sauce of your choice.

Main Ingredients of Vegan Stir-Fried Noodles:

  • Red Onion
  • Bell Pepper
  • King Oyster Mushrooms
  • Kale
  • Tomato Puree
  • Dried Basil
  • Salt and Pepper
  • Cooked Noodles

Ready, set, fry!

Step One: Cook the noodles of your choice in salted water until it’s firm to bite.

Step Two: Heat a non-stick pan and sauté the red onion with the bell pepper for around 2 minutes.

Step Three: Add the King Oyster mushrooms, kale (or vegetable of choice) plus the spices. Sauté for around 5 minutes until veggies have softened. Note: Add a little water or veggie broth to avoid the vegetables from burning.

Step Four: Prepare the tomato puree, stir well and pour into the pan and bring the mixture to a simmer. Allow simmering for about 1 minute.

Step Five: Add the drained noodles and toss to combine. Cook for a further 1-2 minutes. Taste it and adjust the seasonings by adding more salt and pepper to taste.
